Ingredients

  • 1 small white onion, finely diced

  • 1 (15-ounce) can diced tomatoes, with their juices
  • 1 tablespoon butter
  • 1 teaspoon Aleppo pepper
  • Fine sea salt and freshly-cracked black pepper
  • 34 eggs
  • Optional garnishes: sliced chives or chopped parsley, crumbled feta, sliced avocado

Instructions

  • Heat the olive oil in a skillet over medium heat.
  • Add the diced onion and bell pepper, sauté until softened.
  • Stir in the diced tomatoes with their juices, and cook until the mixture thickens.
  • Add the butter, Aleppo pepper, salt, and black pepper, and stir to combine.
  • Make wells in the mixture and crack the eggs into them.
  • Cook until the eggs are done to your liking.
  • Garnish with optional toppings like chives, parsley, feta, or avocado.

Notes

For a spicier version, add more Aleppo pepper or a pinch of red pepper flakes. Serve with warm bread.
