Meatloaf Layer:

  • 1 pound lean ground beef or turkey
  • 1/2 cup seasoned bread crumbs (Italian seasoned works well)
  • 1/4 cup milk (lactose-free or almond milk can be used)
  • 1 egg
  • 1 small white onion, finely chopped (yellow or red onion can be substituted)
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Mashed Potato Layer:

  • 4 large russet potatoes, peeled and cubed
  • 1/2 cup milk (lactose-free or almond milk can be used)
  • 1/4 cup butter
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • 6 slices bacon, cooked and crumbled
  • Salt and pepper to taste

Instructions

  • Preheat oven to 375°F (190°C).
  • In a large bowl, combine ground beef, bread crumbs, milk, egg, onion, garlic, Worcestershire sauce, salt, and black pepper. Mix well.
  • Press the meatloaf mixture into the bottom of a greased baking dish, forming an even layer.
  • Bake in preheated oven for 25-30 minutes until meatloaf is cooked through.
  • Meanwhile, in a large pot, boil the potatoes until tender, about 15-20 minutes. Drain.
  • Mash the potatoes with milk and butter until smooth. Stir in cheddar cheese, sour cream, green onions, bacon, salt, and pepper.
  • Spread the mashed potato mixture over the cooked meatloaf layer in an even layer.
  • Return to oven and bake for an additional 15-20 minutes until the top is golden and bubbly.
  • Let cool slightly before serving.

Notes

  • For a dairy-free version, use lactose-free or almond milk and omit cheese and sour cream.
  • For added flavor, sprinkle extra cheese on top before the final bake.
