Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • ½ cup milk
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 cup fresh blueberries
  • Optional: powdered sugar for glaze

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  • In a bowl, combine flour, baking powder, and salt.
  • In another bowl, mix melted butter, sugar, eggs, milk, lemon zest, and lemon juice until well combined.
  • Gradually fold the dry ingredients into the wet mixture until just combined. Gently fold in the blueberries.
  • Pour batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick inserted comes out clean.
  • Allow bread to cool, then drizzle with a lemon glaze, if desired.

Notes

  • Toss blueberries in a little flour before folding them into the batter to prevent them from sinking.
  • Adjust lemon juice and zest for more or less tartness to taste.
