    • 1 tablespoon ginger, minced
    • 3 cloves garlic, minced
    • 1 tablespoon sesame seeds
    • 2 scallions, diced
  • For the Sushi Rice:
    • 3 sheets nori paper
    • 1½ cups cooked sushi rice, fully cooled
  • For the Glaze:
    • 1 tablespoon toasted sesame oil
    • 2 tablespoons honey
    • 2 teaspoons soy sauce
    • 1 teaspoon Sriracha sauce
    • 1 teaspoon ginger, minced
    • 1 teaspoon sesame seeds
  • Optional Toppings:
    • Sliced scallions
    • Shredded carrots

Instructions

  • Prepare the Salmon Mixture:
    • In a bowl, mix the cubed salmon with olive oil, sesame oil, soy sauce, rice vinegar, honey, ginger, garlic, sesame seeds, and diced scallions.
  • Prepare the Sushi Rice:
    • Lay nori sheets in muffin cups.
    • Press cooled sushi rice into each cup.
  • Assemble the Muffins:
    • Spoon the salmon mixture on top of the rice.
  • Make the Glaze:
    • In a small bowl, whisk together toasted sesame oil, honey, soy sauce, Sriracha sauce, minced ginger, and sesame seeds.
    • Drizzle the glaze over the salmon muffins.
  • Bake:
    • Preheat oven to 375°F (190°C).
    • Bake muffins for 10-15 minutes, until salmon is cooked through.
