  • 4 chicken breasts (boneless, skinless)
  • 1.5 lbs baby potatoes (halved)
  • 1 cup chicken broth
  • 3 tbsp olive oil
  • 2 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 1 cup grated Parmesan cheese (optional)
  • Fresh parsley for garnish

Instructions

  1. In a crockpot, add the halved baby potatoes. Drizzle with olive oil, and season with Italian seasoning, garlic powder, onion powder, paprika, salt, and pepper.
  2. Place the chicken breasts on top of the potatoes. Season the chicken with salt, pepper, and additional Italian seasoning.
  3. Pour the chicken broth over the chicken and potatoes.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is fully cooked and the potatoes are tender.
