Huli Huli Chicken is a tangy, sweet, and savory dish with pineapple, ginger, and garlic. Ideal for a quick and flavorful dinner.

  • 4-5 pounds boneless skinless chicken thighs
  • ½ cup packed light brown sugar
  • ½ cup ketchup
  • ½ cup light soy sauce
  • ½ cup pineapple juice (canned)
  • 1 tablespoon ginger paste or minced ginger
  • 1 tablespoon garlic paste or minced garlic
  • 3 tablespoons apple cider vinegar
  • ½ teaspoon cumin
  • ½ teaspoon coarse black pepper
  • ½ teaspoon paprika (smoked or sweet)
  • Pineapple rings – 1 pineapple or 1 can of slices (drained)
  • ½ cup sliced green onions (for garnish)

Instructions

  • In a bowl, mix brown sugar, ketchup, soy sauce, pineapple juice, ginger, garlic, vinegar, cumin, black pepper, and paprika.
  • Place chicken thighs in a resealable bag or a large dish, pour the marinade over the chicken, and refrigerate for at least 2 hours.
  • Preheat the grill to medium-high heat. Grill chicken for 6-8 minutes on each side, or until fully cooked.
  • Grill pineapple rings until lightly charred, about 2 minutes per side.
  • Garnish the chicken with grilled pineapple and sliced green onions before serving.

Notes

  • Marinate the chicken for at least 2 hours for the best flavor.
  • Can be served with rice or a fresh salad.
