  • 6-ounce can tomato paste
  • 15 ounces water
  • 2 cans kidney beans, drained and rinsed (15-ounce cans)
  • 3 tablespoons chili powder
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 3 tablespoons cumin
  • 1 tablespoon paprika
  • 1 teaspoon chipotle powder
  • ½ teaspoon cayenne pepper
  • ½ tablespoon salt
  • 1 teaspoon white pepper
  • ½ teaspoon baking soda (optional)

Instructions

  • In a large pot, cook ground beef or turkey over medium heat until browned. Drain excess fat.
  • Add diced green peppers and yellow onion to the pot, cooking until softened, about 5 minutes.
  • Stir in diced tomatoes, tomato sauce, tomato paste, and water. Mix well.
  • Add kidney beans, chili powder, garlic powder, onion powder, cumin, paprika, chipotle powder, cayenne pepper, salt, and white pepper. Stir to combine.
  • Bring the mixture to a simmer. Reduce heat to low, cover, and cook for 30 minutes, stirring occasionally.
  • Optional: Add baking soda to reduce acidity.
