Make delightful homemade Jammie Dodgers with a buttery shortbread base and a sweet strawberry or raspberry jam filling. Perfect for any tea time or snack.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup powdered sugar
  • Pinch of salt
  • 1 cup unsalted butter, cold, cubed
  • 2 egg yolks
  • 1 tsp vanilla extract (optional)
  • Filling:
    • 1/2 cup powdered sugar
    • 1/2 cup strawberry jam or raspberry jam

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, whisk together the flour, powdered sugar, and salt.
  • Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
  • Add the egg yolks and vanilla extract (if using) and mix until a dough forms.
  • Roll out the dough on a floured surface to about 1/4 inch thick.
  • Cut out cookies with a round cookie cutter and make a small hole in the center of half of the cookies.
  • Place the cookies on a baking sheet lined with parchment paper.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Let the cookies cool completely.
  • For the filling, sprinkle powdered sugar on the cookies with holes.
  • Spread a small amount of jam on the whole cookies.
  • Top with the cookies with holes, pressing lightly to sandwich them together.

Notes

  • Ensure the butter is cold for the best texture.
  • You can use any flavor of jam for the filling.
