2 cups all-purpose flour
1 cup powdered sugar
Pinch of salt
1 cup unsalted butter, cold, cubed
2 egg yolks
1 tsp vanilla extract (optional)
Filling:
1/2 cup powdered sugar
1/2 cup strawberry jam or raspberry jam
Instructions
Preheat the oven to 350°F (175°C).
In a large bowl, whisk together the flour, powdered sugar, and salt.
Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
Add the egg yolks and vanilla extract (if using) and mix until a dough forms.
Roll out the dough on a floured surface to about 1/4 inch thick.
Cut out cookies with a round cookie cutter and make a small hole in the center of half of the cookies.
Place the cookies on a baking sheet lined with parchment paper.
Bake for 10-12 minutes or until the edges are lightly golden.
Let the cookies cool completely.
For the filling, sprinkle powdered sugar on the cookies with holes.
Spread a small amount of jam on the whole cookies.
Top with the cookies with holes, pressing lightly to sandwich them together.
