Ground Beef Enchiladas - Savory enchiladas filled with ground beef, onions, and bell peppers, topped with cheese and a homemade enchilada sauce. Perfect for a quick and satisfying dinner.

Ingredients

  • 8 soft taco flour tortillas or king corn tortillas
  • 1 lb ground beef
  • 1 cup onion, chopped
  • 1 cup green bell pepper, chopped
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 garlic cloves, minced
  • 1 ½ cups Mexican cheese

Enchilada Sauce:

  • 2 tablespoon canola oil
  • 2 tablespoon all-purpose flour
  • 1 tablespoon tomato paste
  • ¼ teaspoon cumin
  • ¼ teaspoon dried oregano
  • 2 tablespoon chili powder
  • 2 cups water
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Add chopped onion, green bell pepper, salt, black pepper, and minced garlic to the skillet. Cook until vegetables are tender.
  • For the sauce, heat canola oil in a saucepan over medium heat. Stir in flour and cook for 1 minute.
  • Add tomato paste, cumin, oregano, chili powder, water, salt, and black pepper. Stir until thickened.
  • Spread a thin layer of sauce in a baking dish.
  • Fill each tortilla with the beef mixture and roll up. Place seam-side down in the baking dish.
  • Pour remaining sauce over the enchiladas and sprinkle with Mexican cheese.
  • Bake for 20 minutes or until cheese is melted and bubbly.

Notes

  • You can substitute ground beef with ground turkey or chicken for a lighter version.
  • Add your favorite toppings like sour cream, chopped cilantro, or avocado.
