- 1 pound ground beef
- ½ cup onion (diced)
- 2 cloves garlic (minced)
- 3 cups sweet potatoes (cubed, about 2 medium-sized potatoes)
- 2 tablespoons homemade taco seasoning (or 1 packet store-bought)
- 1 cup water
- 1 cup frozen corn
- 1 poblano pepper (seeded and diced)
- 1 cup shredded cheese (optional)
- Cilantro, avocado, and sour cream for serving
Instructions
- In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add diced onion and minced garlic to the skillet. Cook until softened.
- Add the cubed sweet potatoes, taco seasoning, and water. Stir well.
- Cover and cook until sweet potatoes are tender, about 10-15 minutes.
- Stir in the frozen corn and diced poblano pepper. Cook for another 5 minutes.
- Optional: Sprinkle shredded cheese on top and let it melt.
- Serve with cilantro, avocado, and sour cream.
Notes
- For a spicier dish, add a chopped jalapeno.
- Can be served over rice or in tortillas for a different variation.
