Hearty and healthy Ground Beef and Sweet Potatoes Skillet. Ground beef, sweet potatoes, and veggies seasoned with taco spices make a perfect quick dinner.

  • 1 pound ground beef
  • ½ cup onion (diced)
  • 2 cloves garlic (minced)
  • 3 cups sweet potatoes (cubed, about 2 medium-sized potatoes)
  • 2 tablespoons homemade taco seasoning (or 1 packet store-bought)
  • 1 cup water
  • 1 cup frozen corn
  • 1 poblano pepper (seeded and diced)
  • 1 cup shredded cheese (optional)
  • Cilantro, avocado, and sour cream for serving

Instructions

  • In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  • Add diced onion and minced garlic to the skillet. Cook until softened.
  • Add the cubed sweet potatoes, taco seasoning, and water. Stir well.
  • Cover and cook until sweet potatoes are tender, about 10-15 minutes.
  • Stir in the frozen corn and diced poblano pepper. Cook for another 5 minutes.
  • Optional: Sprinkle shredded cheese on top and let it melt.
  • Serve with cilantro, avocado, and sour cream.

Notes

  • For a spicier dish, add a chopped jalapeno.
  • Can be served over rice or in tortillas for a different variation.
