  • 1 ripe avocado, sliced

  • 2 ears of corn, grilled and kernels cut

  • 1/4 cup red onion, finely chopped

  • 1/4 cup fresh cilantro, chopped

  • 1 lime, juiced

  • Cooked rice or quinoa, for serving

Creamy Sauce:

  • 1/4 cup Greek yogurt or sour cream

  • 1 tbsp mayo

  • 1 tsp lime juice

  • 1/2 tsp garlic powder

  • Salt to taste

Instructions

  1. Preheat grill or grill pan. Toss shrimp with olive oil, paprika, garlic powder, salt, and pepper.

  2. Grill shrimp for 2-3 minutes per side until pink and cooked through.

  3. In a bowl, combine grilled corn, red onion, cilantro, lime juice, salt, and pepper to make the salsa.

  4. In a small bowl, mix yogurt, mayo, lime juice, garlic powder, and salt to make the creamy sauce.

  5. Assemble bowls: layer cooked rice or quinoa, shrimp, avocado slices, corn salsa, and drizzle with creamy sauce.

  6. Garnish with extra cilantro or lime wedges if desired.
