  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup molasses
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  • In a large bowl, whisk together flour, baking soda, baking powder, spices, and salt.
  • In a separate bowl, cream the butter and brown sugar until fluffy.
  • Mix in the molasses, egg, and vanilla extract until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  • Chill the dough for 1 hour in the refrigerator.
  • Preheat oven to 350°F (175°C). Roll out the dough on a floured surface to 1/4-inch thickness.
  • Use cookie cutters to shape the dough and place cookies on a lined baking sheet.
  • Bake for 8-10 minutes or until edges are firm. Cool on a wire rack.

Notes

  • For extra flavor, add a pinch of allspice.
  • Decorate with icing or sprinkles once cooled.
