Ingredients

4 boneless, skinless chicken breasts
4 medium-sized potatoes, diced
3 tbsp olive oil
4 cloves garlic, minced
1/2 cup grated parmesan cheese
1 tsp Italian seasoning
1/2 tsp paprika
Salt and pepper to taste
2 tbsp fresh parsley, chopped (optional)
Instructions
Heat 2 tbsp olive oil in a large skillet over medium heat.
Season chicken breasts with Italian seasoning, paprika, salt, and pepper.
Cook chicken in the skillet for 6-7 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
Add remaining olive oil and diced potatoes to the skillet. Season with salt and pepper. Cook for 10-12 minutes, stirring occasionally, until potatoes are crispy and tender.
Add garlic to the skillet and sauté for 1 minute.
Return the chicken to the skillet. Sprinkle parmesan cheese over the chicken and potatoes. Cover and let it cook for 2-3 minutes until cheese melts.
Garnish with fresh parsley, if desired. Serve hot.
Notes
Use red or Yukon Gold potatoes for the best texture and flavor.
Adjust seasoning to taste and add a pinch of red chili flakes for a spicy kick.
