Ingredients

Scale
  • 12 oz pasta (spaghetti or fettuccine)
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 garlic cloves, minced
  • 8 oz cremini or button mushrooms, sliced
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook pasta in salted boiling water until al dente. Reserve 1/2 cup pasta water and drain the rest.
  2. Heat olive oil and butter in a skillet over medium heat. Add garlic and sauté until fragrant.
  3. Stir in sliced mushrooms and cook until softened and browned.
  4. Pour in heavy cream and let it simmer for 2-3 minutes.
  5. Add Parmesan cheese, stirring until melted and creamy. Season with salt and pepper.
  6. Toss cooked pasta in the sauce, adding reserved pasta water if needed for consistency.
  7. Serve garnished with fresh parsley and extra Parmesan if desired.

Notes

  • For a lighter version, use half-and-half instead of heavy cream.
  • Add a pinch of chili flakes for a spicy kick.
  • Use gluten-free pasta to make it gluten-free.
