2 tbsp olive oil
2 chicken breasts, diced
3 cloves garlic, minced
1 cup heavy cream
1 cup chicken broth
1 package (16 oz) potato gnocchi
½ cup Parmesan cheese, grated
1 tsp Italian seasoning
½ tsp salt
¼ tsp black pepper
1 cup baby spinach
1 tbsp butter
Instructions
Heat olive oil in a large skillet over medium heat. Add chicken and cook until golden brown. Remove and set aside.
In the same skillet, add butter and garlic. Sauté until fragrant.
Pour in chicken broth and heavy cream, stirring to combine.
Add gnocchi and season with Italian seasoning, salt, and pepper. Simmer for 5 minutes until gnocchi is tender.
Stir in Parmesan cheese and cooked chicken. Cook for 2 more minutes.
Add spinach and stir until wilted. Remove from heat and serve warm.
Notes
For extra creaminess, add an extra ¼ cup of Parmesan.
