This creamy garlic chicken gnocchi skillet is a rich and flavorful one-pan meal, made with tender chicken, pillowy gnocchi, and a garlicky cream sauce.

Ingredients

  • 2 tbsp olive oil
  • 2 chicken breasts, diced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 package (16 oz) potato gnocchi
  • ½ cup Parmesan cheese, grated
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup baby spinach
  • 1 tbsp butter

Instructions

  • Heat olive oil in a large skillet over medium heat. Add chicken and cook until golden brown. Remove and set aside.
  • In the same skillet, add butter and garlic. Sauté until fragrant.
  • Pour in chicken broth and heavy cream, stirring to combine.
  • Add gnocchi and season with Italian seasoning, salt, and pepper. Simmer for 5 minutes until gnocchi is tender.
  • Stir in Parmesan cheese and cooked chicken. Cook for 2 more minutes.
  • Add spinach and stir until wilted. Remove from heat and serve warm.

Notes

  • For extra creaminess, add an extra ¼ cup of Parmesan.
  • Substitute spinach with kale for a heartier dish.
  • Use rotisserie chicken for a quicker prep time.
