    • 2 ½ cups all-purpose flour
    • 1 cup unsalted butter, cold & cubed
    • ½ cup granulated sugar
    • ½ teaspoon salt
    • 1 teaspoon vanilla extract
    • 2 tablespoons ice water
  • For the apple filling:

    • 4 cups apples, peeled & diced
    • ½ cup brown sugar
    • 1 teaspoon cinnamon
    • ¼ teaspoon nutmeg
    • 1 tablespoon lemon juice
    • 2 teaspoons cornstarch

Instructions

  • Prepare the crust: Preheat oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper.
  • In a bowl, mix flour, sugar, and salt. Cut in cold butter until crumbly. Stir in vanilla and ice water until dough forms.
  • Press two-thirds of the dough into the pan. Bake for 15 minutes, then set aside.
  • Make the apple filling: Toss apples with brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch.
  • Assemble the bars: Spread the apple filling over the baked crust. Crumble the remaining dough over the top.
  • Bake: Return to the oven and bake for 35-40 minutes until golden brown. Cool before cutting into bars.
