  • 12 oz pasta (penne or rotini)
  • 1 lb ground beef
  • 1 onion, diced
  • 1 can (10 oz) enchilada sauce
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups shredded cheddar cheese
  • 1 packet taco seasoning
  • 2 cups chicken broth
  • Salt and pepper to taste
  • Optional toppings: sour cream, cilantro, olives

Instructions

  • Cook pasta according to package instructions; drain and set aside.
  • In a large skillet, cook ground beef with onions until browned. Drain excess fat.
