  • 3 tbsp canola oil
  • 1 large yellow onion, chopped
  • 2 bell peppers, chopped
  • 2 jalapenos, minced
  • 6 garlic cloves, minced
  • 2 lbs lean ground turkey
  • 8 oz tomato sauce
  • 28 oz canned diced tomatoes
  • 1 cup chicken broth
  • 16 oz can red kidney beans, drained
  • 16 oz navy beans, drained
  • 2 bay leaves
  • 2 tbsp chipotle chili powder
  • 3 tsp paprika
  • 1 1/2 tsp oregano
  • 3 tsp cumin
  • 1 tbsp kosher salt (adjust to taste)
  • 2 tbsp minced fresh cilantro
  • Juice of 1 large lime

Instructions

  • Heat canola oil in a large pot over medium heat. Sauté the onion, bell peppers, jalapenos, and garlic until softened.
  • Add the ground turkey and cook until browned.
  • Stir in the tomato sauce, diced tomatoes, chicken broth, kidney beans, navy beans, bay leaves, chipotle chili powder, paprika, oregano, cumin, and salt.
  • Bring to a simmer, then reduce heat and cook for 30 minutes, stirring occasionally.
  • Remove bay leaves, stir in cilantro and lime juice, and serve hot.

Notes

  • Adjust the spice level by varying the amount of jalapenos and chipotle chili powder.
  • This chili can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
