  • 1 cup long-grain white rice (uncooked)
  • 2 cups chicken broth
  • 1 cup salsa
  • 1 cup queso cheese dip (store-bought or homemade)
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped cilantro (optional)
  • Lime wedges for serving (optional)

Instructions

  1. Heat olive oil in a large pot or deep skillet over medium heat. Season the chicken breasts with cumin, chili powder, salt, and pepper, and sear for 4-5 minutes on each side until browned. Remove the chicken and set aside.
  2. In the same pot, add the uncooked rice, chicken broth, and salsa. Stir to combine and bring to a boil.
  3. Place the seared chicken breasts back into the pot, nestling them into the rice. Lower the heat to a simmer, cover, and cook for 18-20 minutes until the rice is tender and the chicken is cooked through.
  4. Remove the chicken from the pot and stir in the queso cheese dip and shredded cheddar until melted and creamy.
  5. Return the chicken to the pot and garnish with cilantro and lime wedges, if desired. Serve immediately.
