  • 1/2 cup cornmeal
  • 1 tablespoon baking powder

  • 3 tablespoons honey
  • 1 large egg
  • 1/3 cup milk
  • 2 tablespoons vegetable oil
  • Pan spray

Instructions

  • Preheat your oven to 400°F (200°C).
  • In a mixing bowl, combine the flour, cornmeal, baking powder, and salt.
  • In another bowl, whisk together the honey, egg, milk, and vegetable oil.
  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  • Lightly spray a mini muffin tin with pan spray.
  • Fill each muffin cup about 2/3 full with the batter.
  • Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean.
