  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup shredded cheddar cheese
  • 1 box (8.5 oz) cornbread mix
  • 1/3 cup milk (as required by the cornbread mix)
  • 1 egg (as required by the cornbread mix)
  • 1/2 cup sour cream (optional for topping)
  • 1/4 cup green onions, chopped (optional for garnish)

Instructions

  • Preheat oven to 400°F (200°C). Grease a 9x13-inch baking dish.
  • Cook the ground beef in a skillet over medium heat, crumbling it as it browns. Add taco seasoning and stir well.
  • Mix the cooked beef, corn, and black beans together. Spread evenly in the prepared dish.
  • Sprinkle shredded cheddar cheese over the beef mixture.
  • Prepare the cornbread mix according to the package instructions (mix with milk and egg). Spread the batter evenly over the beef mixture.
  • Bake for 20-25 minutes or until the cornbread is golden brown and cooked through.
  • Let cool for 5 minutes before serving. Garnish with sour cream and green onions if desired.
