3 cups peeled cubed Russet potatoes, boiled until soft but not mushy
1 lb smoked sausage, thinly sliced
4 tbsp butter
4 tbsp flour
2 cups half & half or milk
salt & pepper to taste
1/2 lb Velveeta cheese, cubed
1/2 cup shredded sharp cheddar cheese
1/4 tsp smoked paprika
Instructions
Preheat oven to 350°F (175°C).
In a large skillet, melt butter over medium heat. Add flour and whisk until smooth.
Gradually add half & half or milk, whisking continuously until thickened.
Add Velveeta cheese cubes and stir until melted and smooth.
Season with salt, pepper, and smoked paprika.
In a large mixing bowl, combine boiled potatoes and smoked sausage.
Pour cheese sauce over the potato and sausage mixture and mix well.
Transfer mixture to a greased baking dish.
Top with shredded sharp cheddar cheese.
Bake in preheated oven for 20-25 minutes until bubbly and golden brown.
Let cool slightly before serving.
Notes
For a spicier kick, add 1/4 tsp cayenne pepper to the cheese sauce.
