This Easy Cheesy Potato & Smoked Sausage Casserole is a delicious, comforting dish featuring tender potatoes, smoky sausage, and creamy cheese sauce. Perfect for family dinners.

Ingredients

  • 3 cups peeled cubed Russet potatoes, boiled until soft but not mushy
  • 1 lb smoked sausage, thinly sliced
  • 4 tbsp butter
  • 4 tbsp flour
  • 2 cups half & half or milk
  • salt & pepper to taste
  • 1/2 lb Velveeta cheese, cubed
  • 1/2 cup shredded sharp cheddar cheese
  • 1/4 tsp smoked paprika

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large skillet, melt butter over medium heat. Add flour and whisk until smooth.
  • Gradually add half & half or milk, whisking continuously until thickened.
  • Add Velveeta cheese cubes and stir until melted and smooth.
  • Season with salt, pepper, and smoked paprika.
  • In a large mixing bowl, combine boiled potatoes and smoked sausage.
  • Pour cheese sauce over the potato and sausage mixture and mix well.
  • Transfer mixture to a greased baking dish.
  • Top with shredded sharp cheddar cheese.
  • Bake in preheated oven for 20-25 minutes until bubbly and golden brown.
  • Let cool slightly before serving.

Notes

  • For a spicier kick, add 1/4 tsp cayenne pepper to the cheese sauce.
  • Use different types of cheese for variety in flavor.
