  • 1 1/2 lbs boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1/4 cup bourbon
  • 1/3 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup apple juice
  • 2 tbsp ketchup
  • 1 tbsp apple cider vinegar
  • 2 cloves garlic, minced
  • 1/2 tsp ginger, grated
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp cornstarch + 2 tbsp water (for thickening)
  • Green onions and sesame seeds for garnish (optional)

Instructions

  • Heat olive oil in a large skillet over medium heat. Add the chicken pieces and cook for 6-8 minutes, until browned and fully cooked. Remove the chicken from the skillet and set aside.
  • In the same skillet, add bourbon, soy sauce, brown sugar, apple juice, ketchup, apple cider vinegar, garlic, ginger, and red pepper flakes (if using). Stir and bring to a simmer.
  • Cook the sauce for 5-7 minutes, allowing it to reduce slightly.
  • In a small bowl, mix the cornstarch and water to create a slurry. Stir it into the sauce to thicken.
  • Return the cooked chicken to the skillet and toss to coat in the bourbon sauce.
  • Cook for an additional 2-3 minutes until the sauce is thick and sticky.
  • Garnish with green onions and sesame seeds if desired, and serve over rice or noodles.

Notes

  • If you prefer a non-alcoholic version, substitute the bourbon with more apple juice or chicken broth.
  • You can use chicken breasts or thighs, depending on your preference.
