  • 1 tablespoon olive oil
  • ½ medium onion, diced
  • 2 teaspoons garlic, minced
  • 1 pound ground beef
  • 1 cup long grain rice
  • 14.5 ounces canned tomatoes, diced or crushed with juice
  • 1 tablespoon tomato paste
  • 2 tablespoons taco seasoning
  • 1 cup frozen corn
  • 15 ounces canned black beans, drained
  • 1 medium red bell pepper, chopped
  • 2 cups low sodium chicken broth
  • 1 medium lime
  • 1 cup sharp cheddar cheese, shredded

Instructions

  • Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté until softened.
  • Add ground beef and cook until browned, breaking it up as it cooks.
  • Stir in taco seasoning, rice, tomatoes, tomato paste, and chicken broth. Bring to a boil.
  • Lower the heat, cover, and simmer for 15-18 minutes, or until the rice is cooked.
  • Add black beans, corn, and red bell pepper. Cook for an additional 5 minutes until heated through.
  • Remove from heat and stir in lime juice.
  • Top with shredded cheddar cheese and serve.
