Ingredients

  • 2-3 large tomatoes, diced
  • ½ red onion, sliced
  • 1 tablespoon fresh herbs (parsley, basil, and/or dill), optional
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt & pepper to taste

Instructions

  • In a large bowl, combine the sliced cucumber, diced tomatoes, and sliced red onion.
  • If using, add the fresh herbs to the bowl.
  • Drizzle the olive oil and red wine vinegar over the salad.
  • Season with salt and pepper to taste.
  • Toss everything together until well combined.
  • Serve immediately or refrigerate for up to 1 hour to allow the flavors to meld.
