12 oz penne pasta
2 tbsp olive oil
1 medium onion, finely chopped
3 garlic cloves, minced
1/2 cup vodka
1 can (14 oz) crushed tomatoes
1 cup heavy cream
1/2 tsp red pepper flakes (optional)
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh basil, chopped (for garnish)
Instructions
Cook the penne pasta according to package instructions. Reserve 1/2 cup of pasta water and drain the rest.
In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, and sauté until fragrant and translucent.
Pour in the vodka and cook for 2-3 minutes to reduce the alcohol.
Stir in crushed tomatoes and red pepper flakes. Simmer for 10 minutes to thicken the sauce.
Lower the heat and add heavy cream, stirring until the sauce is smooth and creamy.
Toss the cooked pasta in the sauce, adding reserved pasta water if needed to adjust the consistency.
Mix in grated Parmesan cheese and season with salt and pepper to taste.
Garnish with fresh basil before serving.
Notes
For a richer flavor, you can use pancetta or bacon, sautéed with the onions and garlic.
