  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup Parmesan cheese, grated
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 3 garlic cloves, minced
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • Fresh basil, for garnish

Instructions

  • Season the chicken breasts with salt, pepper, and Italian seasoning.
  • Heat olive oil and butter in a large skillet over medium heat. Sear the chicken for 5-6 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
  • In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  • Stir in chicken broth and heavy cream, scraping up the browned bits from the pan. Simmer for 2-3 minutes.
  • Add Parmesan cheese, sun-dried tomatoes, and spinach. Cook until the spinach wilts and the sauce thickens.
  • Return the chicken to the skillet, coating it in the creamy sauce.
  • Simmer for 2-3 more minutes, then garnish with fresh basil before serving.

  • For a lighter option, use half-and-half instead of heavy cream.
  • Serve with pasta, rice, or cauliflower mash for a low-carb option.
