  • 6 slices thick-cut bacon, diced
  • 1 small yellow onion, diced
  • 3 stalks celery, diced
  • 2 carrots, peeled and diced
  • 2 cloves garlic, minced
  • 1/3 cup all-purpose flour (40 grams)
  • 2 cups chicken stock
  • 2 pounds russet potatoes, peeled and diced (907 grams)
  • 2 cups whole milk (236.588 ml)
  • Salt and pepper, to taste
  • Shredded cheddar cheese (for topping)
  • Diced scallions (for topping)
  • Bacon pieces (for topping)

Instructions

  1. In a large pot, cook diced bacon over medium heat until crispy. Remove bacon and set aside.
  2. In the same pot, sauté the diced onion, celery, carrots, and garlic in the bacon drippings until soft.
  3. Stir in flour and cook for 1 minute to form a roux.
  4. Gradually add chicken stock, stirring continuously.
  5. Add diced potatoes and simmer until tender, about 15 minutes.
  6. Stir in milk, and season with salt and pepper to taste. Simmer for an additional 5-10 minutes.
  7. Serve soup topped with shredded cheddar, bacon pieces, and diced scallions.

Notes

For a vegetarian option, skip the bacon and use vegetable stock instead of chicken stock.
