  • 1 lb ground hamburger
  • 4 large russet potatoes, peeled and diced
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken or beef broth
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 cup shredded cheddar cheese
  • Salt and pepper, to taste
  • Fresh parsley (optional, for garnish)

Instructions

  1. In a large pot, brown the ground hamburger over medium heat. Remove and set aside.
  2. In the same pot, melt the butter and sauté the onion and garlic until fragrant.
  3. Stir in the flour to create a roux, cooking for 1-2 minutes.
  4. Gradually add the chicken or beef broth, whisking constantly to avoid lumps.
  5. Add the diced potatoes and simmer until tender, about 15 minutes.
  6. Stir in the milk, heavy cream, cooked hamburger, and shredded cheese. Cook until the cheese melts and the soup thickens.
  7. Season with salt and pepper to taste. Garnish with parsley if desired. Serve hot.

  • You can substitute ground turkey or chicken for the hamburger.
