  • 12 oz pasta (spaghetti or fettuccine)
  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook pasta according to package instructions. Reserve 1/2 cup of pasta water, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season shrimp with salt and pepper, then cook for 2-3 minutes per side until pink. Remove and set aside.
  3. In the same skillet, add garlic and sauté until fragrant. Stir in heavy cream, chicken broth, Parmesan cheese, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Simmer for 5 minutes.
  4. Add cooked pasta and shrimp back into the skillet. Toss to combine. If needed, add reserved pasta water to reach desired sauce consistency.
  5. Garnish with fresh parsley and serve immediately.
