10 ounces dry pasta (any kind)
1 pound boneless skinless chicken breast
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1 teaspoon paprika
Salt & pepper, to taste
2 tablespoons olive oil
1 tablespoon butter
4 cloves garlic, minced
1 cup tomatoes, diced
2 cups spinach, chopped (optional)
2 cups heavy cream (or 16 oz)
1/2 cup Parmesan cheese, shredded or grated
Salt & pepper, to taste
Instructions
Cook pasta according to package directions. Drain and set aside.
Season chicken with garlic powder, Italian seasoning, paprika, salt, and pepper.
In a large skillet, heat olive oil over medium heat. Add chicken and cook until golden and cooked through. Remove from skillet and set aside.
In the same skillet, melt butter and sauté garlic until fragrant.
Add tomatoes and cook until softened. Add spinach, if using, and cook until wilted.
Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and sauce thickens.
Return chicken to skillet and combine with sauce.
Toss in cooked pasta until well coated with the creamy sauce.
Adjust seasoning with salt and pepper to taste. Serve warm.
Notes
For a lighter option, substitute heavy cream with half-and-half.
Adjust the spice level by adding red pepper flakes.
Garnish with fresh parsley for added color and flavor.
