  • 1 lb boneless skinless chicken breasts, trimmed of excess fat
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 24 oz. low-sodium chicken broth
  • 2 (15 oz) cans great Northern beans, drained and rinsed
  • 2 (4 oz) cans diced green chiles (one hot, one mild)
  • 1 (15 oz) can whole kernel corn, drained
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp cumin
  • 3/4 tsp oregano
  • 1/2 tsp chili powder
  • 1/4 tsp cayenne pepper
  • Small handful of fresh cilantro, chopped
  • 4 oz reduced fat cream cheese, softened
  • 1/4 cup half and half
  • Toppings: sliced jalapenos, sliced avocados, sour cream, minced fresh cilantro, tortilla strips, shredded Monterey jack or Mexican cheese

Instructions

  • Place chicken breasts at the bottom of the crockpot.
  • Add diced onion, minced garlic, chicken broth, beans, green chiles, corn, and seasonings (salt, pepper, cumin, oregano, chili powder, cayenne).
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through and tender.
  • Remove chicken, shred it, then return it to the crockpot.
  • Stir in cream cheese, half-and-half, and chopped cilantro until the cream cheese is fully melted and the chili is creamy.
  • Serve with desired toppings.

Notes

  • Adjust the spiciness by using more or less cayenne pepper or different heat levels of green chiles.
  • This chili can be made ahead and reheated; it thickens and becomes more flavorful the next day.
