Ingredients

Scale
  • 2 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts (cut into strips)
  • Salt and pepper to taste
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 8 oz mushrooms (sliced)
  • 2 tbsp all-purpose flour
  • 1 ½ cups chicken broth
  • 1 cup sour cream
  • 1 tsp Dijon mustard
  • 1 tsp paprika
  • 12 oz egg noodles (cooked)
  • Fresh parsley for garnish

Instructions

  • Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then cook until golden brown. Remove and set aside.
  • In the same skillet, sauté onions, garlic, and mushrooms until softened.
  • Sprinkle flour over the vegetables and stir for 1-2 minutes.
  • Gradually add chicken broth, stirring to create a smooth sauce.
  • Reduce heat to low and mix in sour cream, Dijon mustard, and paprika.
  • Return the chicken to the skillet and simmer until fully cooked and sauce thickens.
  • Serve over egg noodles and garnish with fresh parsley.

Notes

  • For a lighter option, use Greek yogurt instead of sour cream.
  • This dish pairs beautifully with a side of steamed vegetables or a green salad.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
