Ingredients

Scale
  • 1 tbsp olive oil

  • 1 lb chicken sausage, sliced

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 cup orzo pasta

  • 2 cups chicken broth

  • 1/2 cup heavy cream

  • 1/2 cup grated Parmesan cheese

  • 1 cup baby spinach (optional)

  • Salt and pepper to taste

  • Red pepper flakes (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat.

  2. Add sliced chicken sausage and brown for 3–4 minutes.

  3. Add diced onion and cook until translucent. Stir in garlic and cook for 30 seconds.

  4. Add orzo and toast for 1–2 minutes.

  5. Pour in chicken broth and bring to a simmer. Cover and cook for 8–10 minutes, stirring occasionally.

  6. Once orzo is tender and liquid is mostly absorbed, stir in cream and Parmesan.

  7. Add spinach (if using) and cook until wilted. Season with salt, pepper, and red pepper flakes.

  8. Serve warm and creamy.

Notes

  • Substitute half-and-half for a lighter version.

  • Use kale or arugula instead of spinach if preferred.

  • Add a splash of lemon juice for brightness.
