  • 2 boneless, skinless chicken breasts
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 8 oz fettuccine or penne pasta
  • Salt and pepper, to taste
  • Fresh parsley for garnish (optional)

Instructions

  • Cook pasta according to package directions, drain, and set aside.
  • Season the chicken breasts generously with Cajun seasoning.
  • In a large skillet, heat olive oil over medium heat. Cook the chicken breasts for 6-7 minutes on each side until fully cooked. Remove from the skillet and slice.
  • In the same skillet, add the bell peppers and garlic. Sauté for 3-4 minutes until soft.
  • Stir in chicken broth and heavy cream, bringing to a simmer.
  • Add parmesan cheese, stirring until the sauce thickens.
  • Toss the cooked pasta into the sauce, then add the sliced chicken. Stir to combine.
  • Garnish with fresh parsley and serve hot.

Notes

  • Adjust the amount of Cajun seasoning to taste. For less spice, use half the recommended amount.
  • You can add extra vegetables like mushrooms or spinach for more nutrition.
  • For a lighter version, substitute half of the cream with milk or a dairy-free alternative.
