  • 2 tbsp butter
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 cup milk
  • 2 cups cooked, shredded chicken
  • 8 lasagna noodles, broken into pieces
  • 1 ½ cups Parmesan cheese, grated
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional)
  • 2 tbsp cornstarch (mixed with 2 tbsp water)
  • 1 cup spinach, chopped
  • ½ cup mozzarella cheese, shredded

Instructions

  • In a large pot, melt butter over medium heat. Sauté onion until soft, then add garlic and cook for 1 minute.
  • Pour in chicken broth, heavy cream, and milk. Stir in Italian seasoning, salt, black pepper, and red pepper flakes.
  • Add broken lasagna noodles and cook until tender, stirring occasionally.
  • Stir in shredded chicken and Parmesan cheese. Simmer for 5 minutes.
  • Mix cornstarch with water and add to the soup for thickening.
  • Stir in spinach and let it wilt.
  • Sprinkle mozzarella cheese on top before serving.
