For the crust:
2 cups all-purpose flour
½ cup granulated sugar
½ teaspoon salt
1 cup (2 sticks) butter - chilled and cut into small cubes
For the filling:
8 ounces cream cheese - softened
2 cups granulated sugar
¼ cup flour
¾ cups fresh-squeezed lemon juice
⅓ cup powdered sugar - plus more for topping
6 large eggs
1 teaspoon vanilla
Instructions
Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
In a medium bowl, mix together flour, granulated sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Press into the prepared baking dish.
Bake the crust for 20-25 minutes, or until lightly golden.
Meanwhile, prepare the filling. In a large bowl, beat the cream cheese and granulated sugar until smooth. Add the flour and mix until combined.
Gradually mix in the lemon juice. Add the powdered sugar, eggs, and vanilla, and mix until well blended.
Pour the filling over the baked crust. Return to the oven and bake for 30-35 minutes, or until the center is set.
Allow to cool completely. Sprinkle with additional powdered sugar before serving.
