    • 8 ounces cream cheese - softened
    • 2 cups granulated sugar
    • ¼ cup flour
    • ¾ cups fresh-squeezed lemon juice
    • ⅓ cup powdered sugar - plus more for topping
    • 6 large eggs
    • 1 teaspoon vanilla

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  • In a medium bowl, mix together flour, granulated sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Press into the prepared baking dish.
  • Bake the crust for 20-25 minutes, or until lightly golden.
  • Meanwhile, prepare the filling. In a large bowl, beat the cream cheese and granulated sugar until smooth. Add the flour and mix until combined.
  • Gradually mix in the lemon juice. Add the powdered sugar, eggs, and vanilla, and mix until well blended.
  • Pour the filling over the baked crust. Return to the oven and bake for 30-35 minutes, or until the center is set.
  • Allow to cool completely. Sprinkle with additional powdered sugar before serving.
