  • 1 cup cottage cheese

  • 1/4 cup grated parmesan

  • Salt and pepper to taste

  • Fresh basil or parsley for garnish

Instructions

  1. Cook pasta according to package instructions. Reserve 1/2 cup pasta water before draining.

  2. In a blender or food processor, combine cottage cheese, parmesan, and a splash of pasta water. Blend until smooth.

  3. In a skillet, heat olive oil and sauté garlic until fragrant.

  4. Add blended sauce to the skillet, stir, and heat gently. Add pasta water to thin out if needed.

  5. Toss in the cooked pasta and mix until well coated.

  6. Season with salt, pepper, and chili flakes.
