Ingredients

  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1/2 cup all-purpose flour
  • 1 large egg
  • 1/4 cup milk
  • 1/4 tsp baking powder
  • Salt and pepper to taste
  • 1/4 cup chopped green onions (optional)
  • Oil for frying

Instructions

  1. In a bowl, mix flour, baking powder, salt, and pepper.
  2. Add egg, milk, and mix into a smooth batter.
  3. Fold in corn kernels and green onions (if using).
  4. Heat oil in a skillet over medium heat.
  5. Drop spoonfuls of the batter into the hot oil, flatten slightly.
  6. Fry until golden brown on both sides, about 2-3 minutes per side.
  7. Drain on paper towels and serve warm.
