  • 2 cups elbow macaroni

  • 1 cup mayonnaise

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon Dijon mustard

  • 1 teaspoon sugar

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 1 cup celery, diced

  • 1 cup red bell pepper, diced

  • ½ cup red onion, diced

  • ½ cup shredded carrots

  • 2 hard-boiled eggs, chopped (optional)

Instructions

  • Cook macaroni according to package instructions. Drain and rinse under cold water; set aside.

  • In a large bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, sugar, salt, and black pepper.

  • Add the cooled macaroni, celery, red bell pepper, red onion, shredded carrots, and eggs (if using).

  • Stir until well combined and evenly coated.

  • Cover and refrigerate for at least 1 hour before serving for best flavor.
