  • 12 oz spaghetti
  • 4 oz bacon or pancetta, diced
  • 2 large eggs
  • 2 large egg yolks
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tbsp olive oil
  • Fresh parsley (optional, for garnish)

Instructions

  1. Cook spaghetti in salted boiling water until al dente. Reserve 1 cup of pasta water, then drain.
  2. Heat olive oil in a large skillet over medium heat. Add diced bacon and cook until crispy. Add garlic and sauté briefly.
  3. In a bowl, whisk eggs, egg yolks, and Parmesan cheese until smooth. Season with salt and pepper.
  4. Combine hot spaghetti and bacon mixture in the skillet. Remove from heat, and quickly stir in the egg mixture, tossing to coat. Add reserved pasta water as needed to achieve a creamy sauce.
  5. Serve immediately with additional Parmesan cheese and parsley if desired.
