This Cinnamon Roll Cake recipe is a delightful twist on classic cinnamon rolls, featuring layers of cinnamon sugar and a luscious glaze.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 eggs
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 2 tsp vanilla extract

Cinnamon Swirl:

  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 2 tbsp all-purpose flour
  • 1 tbsp cinnamon

Glaze:

  • 1 cup powdered sugar
  • 23 tbsp milk
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. In a large bowl, mix flour, sugar, baking powder, and salt. Stir in milk, eggs, melted butter, and vanilla extract until smooth. Pour into the prepared baking dish.
  3. In a separate bowl, mix the softened butter, brown sugar, flour, and cinnamon to create the swirl. Drop spoonfuls over the batter and swirl with a knife.
  4. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  5. While the cake bakes, whisk powdered sugar, milk, and vanilla extract to make the glaze. Drizzle over the warm cake.
  6. Let cool slightly and serve warm.

Notes

  • For extra gooeyness, add more cinnamon swirl.
  • Use heavy cream instead of milk in the glaze for a richer flavor.
  • Store leftovers in an airtight container for up to 3 days.
