1 3/4 cups all-purpose flour
1/2 cup granulated sugar
1/4 cup unsweetened cocoa powder
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk
1/4 cup vegetable oil
1 large egg
1 teaspoon vanilla extract
1/3 cup creamy peanut butter
Instructions
Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
In a large bowl, mix flour, sugar, cocoa powder, baking powder, and salt.
In another bowl, whisk together milk, vegetable oil, egg, and vanilla extract.
Add wet ingredients to dry ingredients and mix until just combined.
Fill each muffin cup halfway with batter.
Drop a small spoonful of peanut butter into the center of each muffin and swirl with a toothpick.
Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
