  • 1 3/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/3 cup creamy peanut butter

Instructions

  • Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  • In a large bowl, mix flour, sugar, cocoa powder, baking powder, and salt.
  • In another bowl, whisk together milk, vegetable oil, egg, and vanilla extract.
  • Add wet ingredients to dry ingredients and mix until just combined.
  • Fill each muffin cup halfway with batter.
  • Drop a small spoonful of peanut butter into the center of each muffin and swirl with a toothpick.
  • Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
  • Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
