  • 1 ½ cups graham cracker crumbs or chocolate cookie crumbs

  • ¼ cup granulated sugar

  • 6 tbsp unsalted butter, melted

For the ganache filling:

  • 1 ½ cups heavy cream

  • 12 oz semisweet or bittersweet chocolate, chopped

  • 1 tsp vanilla extract

  • Pinch of salt

Instructions

  1. Prepare the crust: Preheat oven to 350°F (175°C). Combine crumbs, sugar, and melted butter in a bowl. Mix until evenly moistened.

  2. Press mixture into a 9-inch tart pan, pressing firmly into the bottom and sides.

  3. Bake for 10 minutes. Let cool completely.

  4. Make the ganache: Heat heavy cream in a saucepan until simmering. Do not boil.

  5. Pour hot cream over chopped chocolate in a heatproof bowl. Let sit for 2–3 minutes, then stir until smooth. Add vanilla and salt.

  6. Pour ganache into the cooled crust and smooth the top.

  7. Chill in the refrigerator for at least 2 hours or until set.

  8. Garnish with berries, sea salt, or chocolate curls before serving, if desired.

  • You can use a store-bought crust to save time.

  • Add a tablespoon of liqueur (e.g., Grand Marnier or Kahlúa) for a flavor twist.
