  • 1 leek, halved lengthwise, sliced, and rinsed
  • 4 garlic cloves, minced
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 2 boneless skinless chicken breasts
  • 2 sprigs fresh thyme
  • 2 sprigs fresh tarragon
  • 1 bay leaf
  • 5 cups low-sodium chicken broth
  • ¼ cup roughly chopped fresh parsley

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add carrots, parsnips, celery, onion, and leek; sauté until softened.
  • Stir in garlic, salt, and pepper; cook for 1 minute.
  • Add chicken breasts, thyme, tarragon, bay leaf, and chicken broth.
  • Bring to a boil, reduce heat, and simmer for 30-35 minutes.
  • Remove chicken, shred it, and return to the pot.
  • Stir in parsley and adjust seasoning.
  • Serve hot.
