4 boneless, skinless chicken breasts
1 cup all-purpose flour
2 large eggs, beaten
1 cup breadcrumbs
1 cup grated Parmesan cheese
2 cups marinara sauce
1 ½ cups shredded mozzarella cheese
2 tbsp olive oil
Salt and pepper to taste
Fresh basil for garnish (optional)
Instructions
Preheat oven to 400°F (200°C).
Pound chicken breasts to even thickness and season with salt and pepper.
Dredge each chicken breast in flour, dip in beaten eggs, and coat with breadcrumbs mixed with Parmesan cheese.
Heat olive oil in a skillet over medium heat and fry chicken until golden brown on both sides, about 3-4 minutes per side.
Transfer chicken to a baking dish, top each with marinara sauce and shredded mozzarella.
Bake for 15-20 minutes until cheese is melted and bubbly.
Garnish with fresh basil if desired and serve hot.
Notes
For a lighter version, bake the breaded chicken instead of frying.
