  • 1 lb boneless, skinless chicken thighs

  • 2 tbsp olive oil

  • 2 tbsp lemon juice

  • 2 garlic cloves, minced

  • 1 tsp dried oregano

  • 1 tsp ground cumin

  • 1 tsp smoked paprika

  • Salt and black pepper to taste

  • 2 cups cooked rice or quinoa

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, diced

  • 1/4 red onion, thinly sliced

  • 1/4 cup crumbled feta cheese

  • 1/4 cup kalamata olives (optional)

  • 1/2 cup tzatziki sauce

  • Fresh parsley for garnish

Instructions

  1. In a bowl, combine olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper.

  2. Add chicken and marinate for at least 30 minutes (or overnight).

  3. Cook chicken in a skillet over medium heat for 5–6 minutes per side or until fully cooked. Let rest, then slice.

  4. Assemble bowls with rice/quinoa, tomatoes, cucumber, red onion, feta, olives, and sliced chicken.
