This Chicken Avocado Melt Sandwich recipe combines juicy chicken, creamy avocado, melted cheese, and toasted bread for the ultimate comfort food. Perfect for a quick lunch or dinner!

Ingredients

  • 2 slices of bread (your choice)
  • 1 cooked chicken breast, shredded or sliced
  • 1/2 avocado, mashed
  • 2 slices of cheese (cheddar, provolone, or your choice)
  • 1 tbsp mayonnaise (optional)
  • 1 tbsp butter
  • Salt and pepper to taste

Instructions

  • Spread mashed avocado on one side of a bread slice. Season with salt and pepper.
  • Layer shredded chicken and cheese slices over the avocado.
  • Top with the second bread slice. If desired, spread mayonnaise on the inside.
  • Butter the outer sides of the sandwich.
  • Heat a skillet over medium heat and grill the sandwich on each side until golden brown and the cheese is melted (about 3-4 minutes per side).
  • Slice in half and serve warm.

Notes

  • For extra flavor, add tomato slices or spinach leaves.
  • You can substitute mayonnaise with mustard or omit it altogether.
  • Use a panini press for a more even melt.
