This Chicken and Dumpling Casserole is a hearty, comforting dish made with tender shredded chicken, Bisquick mix, and a creamy blend of chicken stock and cream of chicken soup. It's perfect for weeknight dinners or family gatherings, packed with flavor from onions, bell peppers, and poultry seasoning.

  • 1 stick of butter
  • 3 cups boneless, skinless chicken breasts, boiled and shredded
  • ¼ cup finely chopped onion
  • ¼ cup finely chopped green bell pepper
  • ¼ cup finely chopped red or orange bell pepper
  • 1 teaspoon poultry seasoning
  • 1 teaspoon freshly ground pepper
  • 2 teaspoons salt
  • 2 cups Bisquick flour
  • 2 cups milk
  • 2 cups chicken stock
  • 1 can cream of chicken soup

Instructions

  • Preheat the oven to 350°F (175°C). Melt the butter in a 9x13 baking dish in the oven.
  • Spread the shredded chicken over the melted butter in the baking dish.
  • Sprinkle the chopped onions and bell peppers evenly over the chicken.
  • In a separate bowl, mix the Bisquick and milk until smooth, then pour this over the chicken and vegetables.
  • In another bowl, combine the chicken stock and cream of chicken soup until blended. Pour this mixture gently over the top of the casserole.
  • Bake uncovered for 40-45 minutes or until golden and bubbly. Serve warm.

  • For added flavor, top with fresh parsley or a sprinkle of cheese before baking.
  • This dish can be prepped in advance and refrigerated, then baked when needed.
